Have you ever been to Bologna, dubbed the “food capital of Italy”? In this region, pasta is still rolled by hand and it’s even considered sacrilegious to use a machine. Tagliatelle, pappardelle, tortellini, maltagliati and dadini are all rolled by hand with a large rolling pin called a mattarello. It takes a lot of practice to get the pasta rolled evenly and in this class you will pick up the elusive techniques needed to master it!

In this class, you will learn how to make the following:

  • Tagliatelle with prosciutto, onion & parmigiano

  • Spinach & ricotta tortellini, tomato, olives & basil

  • Zucchini & zucchini flower lasagnetta
