What is pasta asciutta? If you were fortunate enough to grow up in an Italian family, your Nonna made you a pasta tossed in some sort of sauce or ragu. If not, then this is the class to take! Pasta asciutta refers to pasta that is not in a broth, soup or baked. Chef Michaud will make 3 different kinds of pasta asciutta with sauces to accompany each shape. The important thing to remember is that the pasta is a vehicle for the sauce and chef will show you which ones marry well together.

In this class, you will learn how to make the following:

  • Spaghetti alla chitarra, heirloom tomatoes & basil

  • Pappardelle, pork bolognese, sweet peppers & rosemary

  • Maltaglati, chanterelle mushrooms, parsley & 24 month parmigiano reggiano
